Creamy Coated Baked Potatoes

  • flour
  • butter
  • salt
  • cream

Method

  1. 1 Bake potatoes in a slow oven (300°F) until cooked through, then let them cool completely.
  2. 2 Slice the cold potatoes thinly. Place in a pan, sprinkle with a little flour, and toss gently until each piece is coated.
  3. 3 Add small bits of butter, salt, and enough cream to cover the potatoes halfway. Do not use too much cream.
  4. 4 Cook over heat, stirring gently with a knife blade to lift from the bottom without turning over, until the cream reduces and the potatoes glisten.
  5. 5 Transfer to a warm serving dish immediately. If no cream remains, add a little more butter.
