Creamy Clam Chowder With Onion
Ingredients
- 1 quart clam broth
- parsley
- salt
- red pepper
- grated onion
- 1 ½ cups minced clams
- 1 tablespoon butter
- 2 tablespoons flour
- 1 pint heavy cream
Method
- 1 Reheat one quart of clam broth and season with parsley, salt, red pepper, and grated onion.
- 2 Add 1 ½ cups minced clams. Thicken with 1 tablespoon butter and 2 tablespoons flour blended with a little cold broth. Stir while cooking.
- 3 Add 1 pint of boiling cream and serve immediately.
