Creamy Clam Chowder With Onion

  • 1 quart clam broth
  • parsley
  • salt
  • red pepper
  • grated onion
  • 1 ½ cups minced clams
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 1 pint heavy cream

Method

  1. 1 Reheat one quart of clam broth and season with parsley, salt, red pepper, and grated onion.
  2. 2 Add 1 ½ cups minced clams. Thicken with 1 tablespoon butter and 2 tablespoons flour blended with a little cold broth. Stir while cooking.
  3. 3 Add 1 pint of boiling cream and serve immediately.
