Creamy Clam And Oyster Chowder
Ingredients
- 1 pint oysters
- liquor from oysters
- 1 can (12 oz) minced clams
- 1 quart milk
- 2 tablespoons butter
- 2 tablespoons flour
- cold milk for roux
- salt and pepper to taste
- minced parsley
- powdered mace
- grated onion
- crackers for serving
Method
- 1 Chop the oysters and heat them gently with their own liquor in a pot.
- 2 Add the minced clams and the quart of milk to the pot.
- 3 Rub the butter and flour together until smooth, then stir into the soup with a little cold milk to thicken.
- 4 Season with salt, pepper, minced parsley, powdered mace, and grated onion.
- 5 Serve hot with crackers on the side.
