Creamy Chocolate Caramels

Ingredients

  • 6 lbs sugar
  • 4 lbs glucose
  • 1½ lbs unsweetened chocolate
  • 2 quarts heavy cream
  • 1½ lbs butter
  • Vanilla extract

Method

  1. 1 Combine sugar and cream in a large pan, stirring well. Add glucose and bring to a boil, cooking until the mixture reaches a stiff ball stage.
  2. 2 Remove pan from heat briefly. Add butter in small pieces, followed by the chocolate, stirring continuously until fully incorporated.
  3. 3 Bring the mixture back to a boil briefly. Stir in vanilla extract, then remove from heat.
  4. 4 Pour the mixture onto an oiled slab, spreading it into a sheet about ½ inch thick. Let it set.
  5. 5 Once set, mark deep lines with a caramel cutter. When completely cold, cut into pieces with a sharp knife and wrap in paper.
