Creamy Chocolate Caramels
Ingredients
- 6 lbs sugar
- 4 lbs glucose
- 1½ lbs unsweetened chocolate
- 2 quarts heavy cream
- 1½ lbs butter
- Vanilla extract
Method
- 1 Combine sugar and cream in a large pan, stirring well. Add glucose and bring to a boil, cooking until the mixture reaches a stiff ball stage.
- 2 Remove pan from heat briefly. Add butter in small pieces, followed by the chocolate, stirring continuously until fully incorporated.
- 3 Bring the mixture back to a boil briefly. Stir in vanilla extract, then remove from heat.
- 4 Pour the mixture onto an oiled slab, spreading it into a sheet about ½ inch thick. Let it set.
- 5 Once set, mark deep lines with a caramel cutter. When completely cold, cut into pieces with a sharp knife and wrap in paper.
