Creamy Chicken Stew
Ingredients
- 2 whole chickens
- ½ cup chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- ¼ tsp nutmeg
- 1 tbsp chopped fresh parsley
- 1 tbsp white wine
Method
- 1 Boil the chickens until half-cooked. Remove from heat, let cool slightly, then skin and shred the meat into strips.
- 2 In a stewpan, combine ½ cup chicken broth with 1 cup boiling cream. Whisk in butter rolled with flour until smooth.
- 3 Add salt, pepper, nutmeg, parsley, and white wine to the sauce. Stir to combine.
- 4 Add the shredded chicken to the pan. Simmer slowly until the chicken is heated through and coated in sauce.
