Creamy Chicken Stew

Ingredients

  • 2 whole chickens
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • ¼ tsp nutmeg
  • 1 tbsp chopped fresh parsley
  • 1 tbsp white wine

Method

  1. 1 Boil the chickens until half-cooked. Remove from heat, let cool slightly, then skin and shred the meat into strips.
  2. 2 In a stewpan, combine ½ cup chicken broth with 1 cup boiling cream. Whisk in butter rolled with flour until smooth.
  3. 3 Add salt, pepper, nutmeg, parsley, and white wine to the sauce. Stir to combine.
  4. 4 Add the shredded chicken to the pan. Simmer slowly until the chicken is heated through and coated in sauce.
