Creamy Chicken Blanquette

Ingredients

  • 1 pint cold chicken, cut into small dice
  • ½ cup stock
  • ½ cup milk
  • 1 tablespoon flour
  • 1 tablespoon butter
  • 2 egg yolks
  • Salt and pepper to taste

Method

  1. 1 Rub butter and flour together until smooth, then place in a frying pan.
  2. 2 Add stock and milk, season with salt and pepper, and stir until it boils.
  3. 3 Add the diced chicken and heat through over a moderate fire.
  4. 4 Remove from heat, stir in well-beaten egg yolks, and serve immediately.
