Creamy Chicken Blanquette
Ingredients
- 1 pint cold chicken, cut into small dice
- ½ cup stock
- ½ cup milk
- 1 tablespoon flour
- 1 tablespoon butter
- 2 egg yolks
- Salt and pepper to taste
Method
- 1 Rub butter and flour together until smooth, then place in a frying pan.
- 2 Add stock and milk, season with salt and pepper, and stir until it boils.
- 3 Add the diced chicken and heat through over a moderate fire.
- 4 Remove from heat, stir in well-beaten egg yolks, and serve immediately.
