Creamy Chicken And Tapioca Soup
Ingredients
- 6 cups chicken stock
- 1 cup cooked tapioca
- 1 cup milk
- 2 egg yolks
- 1 cup cream
- 2 egg whites
Method
- 1 Reheat 6 cups of chicken stock in a pot.
- 2 Stir in 1 cup of cooked tapioca and 1 cup of milk.
- 3 Season the soup to taste with salt and pepper.
- 4 Beat the 2 egg yolks smooth with 1 cup of cream.
- 5 Stir the yolk mixture into the hot soup and cook until thickened.
- 6 Beat the 2 egg whites to stiff peaks and fold into the soup.
