Ingredients

  • 6 cups chicken stock
  • 1 cup cooked tapioca
  • 1 cup milk
  • 2 egg yolks
  • 1 cup cream
  • 2 egg whites

Method

  1. 1 Reheat 6 cups of chicken stock in a pot.
  2. 2 Stir in 1 cup of cooked tapioca and 1 cup of milk.
  3. 3 Season the soup to taste with salt and pepper.
  4. 4 Beat the 2 egg yolks smooth with 1 cup of cream.
  5. 5 Stir the yolk mixture into the hot soup and cook until thickened.
  6. 6 Beat the 2 egg whites to stiff peaks and fold into the soup.
