Creamy Chicken And Egg Gravy

Ingredients

  • 1 whole chicken, cleaned and cut up
  • 1/2 lb salt pork, cut into thin strips
  • Cold water to cover
  • 1 chopped onion
  • 1 chopped shallot
  • Fresh parsley, chopped
  • Pepper to taste
  • 3/4 cup milk
  • 2 eggs, beaten
  • 2 tbsp flour
  • 1 oz butter

Method

  1. 1 Clean, wash, and cut up the fowl. Lay pieces in salt water for 30 minutes, then rinse.
  2. 2 Place chicken and salt pork strips in a saucepan. Cover with cold water, cover pot, and heat slowly.
  3. 3 Stew slowly for 1-4 hours until tender. Add onion, shallot, parsley, and pepper.
  4. 4 Bring to a boil. Whisk milk, eggs, and flour together, then stir into the pot.
  5. 5 Boil briefly, stir in butter, arrange chicken in a dish, and pour gravy over to serve.
