Creamy Chicken And Egg Gravy
Ingredients
- 1 whole chicken, cleaned and cut up
- 1/2 lb salt pork, cut into thin strips
- Cold water to cover
- 1 chopped onion
- 1 chopped shallot
- Fresh parsley, chopped
- Pepper to taste
- 3/4 cup milk
- 2 eggs, beaten
- 2 tbsp flour
- 1 oz butter
Method
- 1 Clean, wash, and cut up the fowl. Lay pieces in salt water for 30 minutes, then rinse.
- 2 Place chicken and salt pork strips in a saucepan. Cover with cold water, cover pot, and heat slowly.
- 3 Stew slowly for 1-4 hours until tender. Add onion, shallot, parsley, and pepper.
- 4 Bring to a boil. Whisk milk, eggs, and flour together, then stir into the pot.
- 5 Boil briefly, stir in butter, arrange chicken in a dish, and pour gravy over to serve.
