  • 1 whole chicken, cut up
  • Salt and pepper
  • Butter
  • Flour
  • Minced parsley
  • 2 bunches asparagus
  • 1 tablespoon cream
  • 1 cup cream

Method

  1. 1 Season chicken with salt and pepper, then brown in butter.
  2. 2 Dredge browned chicken with flour and sprinkle with minced parsley.
  3. 3 Boil asparagus in salted water until tender but not broken.
  4. 4 In a saucepan, melt butter and add 1 tablespoon cream. Layer half the asparagus, pepper, chicken, remaining asparagus, and dots of butter.
  5. 5 Pour 1 cup cream over the top and cook slowly until chicken is done.
