Creamy Chestnut And Chicken Stock Soup
Ingredients
- 1 quart chestnuts (Spanish preferred)
- 1 pint chicken stock
- 2 tablespoons flour
- 1 teaspoon sugar
- salt and paprika to taste
- 1 tablespoon butter (optional)
Method
- 1 Cover chestnuts with boiling salted water and cook until very soft.
- 2 Rub the cooked chestnuts through a coarse sieve into a pot.
- 3 Add chicken stock (or milk with butter), sugar, salt, and paprika.
- 4 Thicken with flour blended with water, then simmer for five minutes.
- 5 Serve immediately.
