Creamy Chestnut And Chicken Stock Soup

Ingredients

  • 1 quart chestnuts (Spanish preferred)
  • 1 pint chicken stock
  • 2 tablespoons flour
  • 1 teaspoon sugar
  • salt and paprika to taste
  • 1 tablespoon butter (optional)

Method

  1. 1 Cover chestnuts with boiling salted water and cook until very soft.
  2. 2 Rub the cooked chestnuts through a coarse sieve into a pot.
  3. 3 Add chicken stock (or milk with butter), sugar, salt, and paprika.
  4. 4 Thicken with flour blended with water, then simmer for five minutes.
  5. 5 Serve immediately.
