Creamy Celery Soup With Egg Yolk
Ingredients
- 2 heads celery (coarser parts)
- 1/2 onion, sliced
- Water
- Butter
- Flour
- Milk
- Salt
- Pepper
- 1 egg yolk
- 2 tbsp cream
Method
- 1 Wash and chop celery. Place in a saucepan with sliced onion and cover with boiling water. Cook until tender.
- 2 Press the cooked celery and onion through a sieve, including the cooking water.
- 3 Make a roux using butter and flour. Add the celery purée and enough boiling milk to reach desired consistency.
- 4 Season with salt and pepper. Remove from heat and stir in egg yolk and cream.
