Creamy Celery Soup With Egg Yolk

Ingredients

  • 2 heads celery (coarser parts)
  • 1/2 onion, sliced
  • Water
  • Butter
  • Flour
  • Milk
  • Salt
  • Pepper
  • 1 egg yolk
  • 2 tbsp cream

Method

  1. 1 Wash and chop celery. Place in a saucepan with sliced onion and cover with boiling water. Cook until tender.
  2. 2 Press the cooked celery and onion through a sieve, including the cooking water.
  3. 3 Make a roux using butter and flour. Add the celery purée and enough boiling milk to reach desired consistency.
  4. 4 Season with salt and pepper. Remove from heat and stir in egg yolk and cream.
