Creamy Celery Root Macaroni Soup
Ingredients
- 3 celery roots
- 1 heaping tablespoon butter
- 1 small tablespoon flour
- Cayenne pepper
- Salt
- 3/4 cup macaroni, boiled
- Boiling milk
- 2 egg yolks
- 1/2 cup cream
Method
- 1 Wash, peel, and slice celery roots. Cook in boiling water until tender, then mash through a sieve with the cooking liquid.
- 2 Melt butter in a saucepan. Stir in flour to make a roux, then add the celery purée. Season with cayenne pepper and salt.
- 3 Add the boiled macaroni to the soup. Bring to a boil, then remove from heat.
- 4 Stir in enough boiling milk to reach desired consistency.
- 5 Beat egg yolks with cream. Temper the mixture by stirring in a little hot soup, then stir it back into the pot off the heat to prevent curdling.
