Creamy Celery Root Macaroni Soup

Ingredients

  • 3 celery roots
  • 1 heaping tablespoon butter
  • 1 small tablespoon flour
  • Cayenne pepper
  • Salt
  • 3/4 cup macaroni, boiled
  • Boiling milk
  • 2 egg yolks
  • 1/2 cup cream

Method

  1. 1 Wash, peel, and slice celery roots. Cook in boiling water until tender, then mash through a sieve with the cooking liquid.
  2. 2 Melt butter in a saucepan. Stir in flour to make a roux, then add the celery purée. Season with cayenne pepper and salt.
  3. 3 Add the boiled macaroni to the soup. Bring to a boil, then remove from heat.
  4. 4 Stir in enough boiling milk to reach desired consistency.
  5. 5 Beat egg yolks with cream. Temper the mixture by stirring in a little hot soup, then stir it back into the pot off the heat to prevent curdling.
