Creamy Celery And Rice Soup

Ingredients

  • 1 quart chicken or veal broth
  • 1 quart milk
  • 1/2 cup rice
  • 1 teaspoon salt
  • 1 head celery
  • White pepper
  • Grated nutmeg

Method

  1. 1 Pick over and wash the rice, then rinse it well in cold water.
  2. 2 In a thick saucepan, combine the rice, 1 pint of milk, and 1 teaspoon of salt over heat.
  3. 3 Wash the celery, grate the white stalks, and add them to the rice mixture with enough milk to cover.
  4. 4 Simmer gently until the rice is tender enough to rub through a sieve with a potato masher, adding more milk if needed.
  5. 5 Rub the mixture through a sieve and return it to the saucepan.
  6. 6 Gradually stir in the quart of chicken or veal broth.
  7. 7 If the soup is too thick, add a little more milk to reach a creamy consistency.
  8. 8 Heat until scalding hot, season with salt, white pepper, and a little grated nutmeg, and serve immediately.
