Creamy Celery And Rice Soup
Ingredients
- 1 quart chicken or veal broth
- 1 quart milk
- 1/2 cup rice
- 1 teaspoon salt
- 1 head celery
- White pepper
- Grated nutmeg
Method
- 1 Pick over and wash the rice, then rinse it well in cold water.
- 2 In a thick saucepan, combine the rice, 1 pint of milk, and 1 teaspoon of salt over heat.
- 3 Wash the celery, grate the white stalks, and add them to the rice mixture with enough milk to cover.
- 4 Simmer gently until the rice is tender enough to rub through a sieve with a potato masher, adding more milk if needed.
- 5 Rub the mixture through a sieve and return it to the saucepan.
- 6 Gradually stir in the quart of chicken or veal broth.
- 7 If the soup is too thick, add a little more milk to reach a creamy consistency.
- 8 Heat until scalding hot, season with salt, white pepper, and a little grated nutmeg, and serve immediately.
