Creamy Celery And Onion Purée
Ingredients
- 6 heads white celery, cleaned and chopped
- 2 onions, sliced
- 1 tbsp butter
- 2 tbsp flour
- 1 cup water or beef/veal broth
- Salt and pepper to taste
- 1-2 tbsp cream or milk
Method
- 1 Chop celery and slice onions. Place in a stewpan with butter and sweat over low heat until tender.
- 2 Stir in flour, then add water or broth, salt, and pepper. Bring to a boil.
- 3 Simmer for 15 minutes, then stir in cream or milk.
- 4 Pass the sauce through a fine sieve using the back of a spoon to create a smooth purée.
