Creamy Celery And Onion Purée

Ingredients

  • 6 heads white celery, cleaned and chopped
  • 2 onions, sliced
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 cup water or beef/veal broth
  • Salt and pepper to taste
  • 1-2 tbsp cream or milk

Method

  1. 1 Chop celery and slice onions. Place in a stewpan with butter and sweat over low heat until tender.
  2. 2 Stir in flour, then add water or broth, salt, and pepper. Bring to a boil.
  3. 3 Simmer for 15 minutes, then stir in cream or milk.
  4. 4 Pass the sauce through a fine sieve using the back of a spoon to create a smooth purée.
