Creamy Cauliflower Soup With Croutons

Ingredients

  • 1 medium cauliflower
  • Salted water
  • Consommé or broth
  • 1 egg yolk
  • 3 tbsp heavy cream
  • 1/2 oz butter
  • Croutons

Method

  1. 1 Parboil cauliflower in salted water until tender. Drain well and press through a sieve.
  2. 2 Dilute the cauliflower puree with consommé or broth. Boil for a few minutes, stirring well.
  3. 3 Beat the egg yolk with cream. Temper by mixing with a few spoonfuls of the hot soup.
  4. 4 Remove soup from heat. Stir in the egg mixture and add butter. Serve with croutons.
