Creamy Cauliflower Soup With Croutons
Ingredients
- 1 medium cauliflower
- Salted water
- Consommé or broth
- 1 egg yolk
- 3 tbsp heavy cream
- 1/2 oz butter
- Croutons
Method
- 1 Parboil cauliflower in salted water until tender. Drain well and press through a sieve.
- 2 Dilute the cauliflower puree with consommé or broth. Boil for a few minutes, stirring well.
- 3 Beat the egg yolk with cream. Temper by mixing with a few spoonfuls of the hot soup.
- 4 Remove soup from heat. Stir in the egg mixture and add butter. Serve with croutons.
