Creamy Cauliflower And Gruyere Soup
Ingredients
- 1 cauliflower
- salted water
- 1 onion, chopped
- 1 slice brown bread
- white pepper
- 2 tsp grated Gruyere cheese
Method
- 1 Wash cauliflower thoroughly to remove grit and insects. Simmer head-down in salted water until tender, then remove the florets.
- 2 Simmer the outer leaves and odd bits in the cooking liquid. Pass this mixture through a sieve to create a smooth base.
- 3 Fry the chopped onions, then add the strained cauliflower liquor, the sieved pulp, a slice of brown bread, and white pepper.
- 4 Cook gently for 30 minutes. Remove the bread slice before serving and sprinkle with grated Gruyere cheese.
