Creamy Carrot And Celery Root Soup
Ingredients
- 6 small French carrots
- 2 ounces butter
- 1 slightly heaping tablespoon flour
- A few grains cayenne pepper
- Milk
- A few slices cooked celery root (celeriac)
- Salt to taste
- 1 tablespoon sherry (optional)
- Fried croutons for serving
Method
- 1 Wash and scrape carrots. Boil in water until tender, then remove from heat.
- 2 Mix carrots with milk and press through a sieve to create a smooth purée.
- 3 Melt butter in a saucepan. Rub in flour and cayenne pepper to make a roux.
- 4 Gradually stir in the carrot purée until smooth. Add celery root slices and salt.
- 5 Stir in sherry if desired. Serve hot with fried croutons.
