Creamy Carrot And Celery Rice Soup
Ingredients
- 1 quart thinly sliced carrots
- 1 head celery
- 3 to 4 quarts water
- 1/2 cup rice
- Salt and pepper to taste
- 1/2 cup cream
Method
- 1 Combine carrots, celery, and water in a large pot. Bring to a boil and simmer for 2.5 hours.
- 2 Stir in rice and continue boiling for 1 hour until rice is tender.
- 3 Season with salt and pepper, then stir in cream before serving.
