Creamy Carrot And Celery Rice Soup

Ingredients

  • 1 quart thinly sliced carrots
  • 1 head celery
  • 3 to 4 quarts water
  • 1/2 cup rice
  • Salt and pepper to taste
  • 1/2 cup cream

Method

  1. 1 Combine carrots, celery, and water in a large pot. Bring to a boil and simmer for 2.5 hours.
  2. 2 Stir in rice and continue boiling for 1 hour until rice is tender.
  3. 3 Season with salt and pepper, then stir in cream before serving.
