Creamy Cabbage Slaw With Hard Boiled Eggs
Ingredients
- 1 head white cabbage, shredded fine
- Ice water
- 2 egg yolks, hard-boiled
- 1 egg, well-beaten
- ½ cup olive oil
- Juice of 1 lemon
- Mustard, salt, and pepper to taste
Method
- 1 Shred the cabbage fine and soak it in ice-water.
- 2 Whisk together the hard-boiled egg yolks, beaten egg, olive oil, lemon juice, mustard, salt, and pepper to make the dressing.
- 3 Drain the cabbage thoroughly and mix it with the dressing.
- 4 Serve the slaw very cold.
