Creamy Cabbage, Celery, And Beet Salad
Ingredients
- 1 small head cabbage, shredded fine
- 1 cup celery, finely shredded
- 2 onions, chopped fine
- 2 green peppers, chopped fine
- 1 cup mayonnaise dressing
- 1 ½ teaspoons salt
- 1 teaspoon paprika
- pickled beets, finely chopped, for garnish
Method
- 1 Shred the cabbage fine and place in salt water to crisp for one hour.
- 2 Drain the cabbage and turn it onto a cloth to dry thoroughly.
- 3 Place the cabbage in a bowl and add the shredded celery, chopped onions, green peppers, mayonnaise, salt, and paprika.
- 4 Toss to mix thoroughly and serve on individual salad plates.
- 5 Garnish with finely chopped pickled beets arranged as a border around each serving.
