Creamy Cabbage And Onion Soup
Ingredients
- 1 fair-sized cabbage
- 1 large Spanish onion
- 1.5 oz butter
- salt and pepper to taste
- 1/8 tsp nutmeg
- 1.5 pints milk
- 2 tbsp Allinson fine wheatmeal
- 1 quart water
- toasted or fried bread squares or plain rusks for serving
Method
- 1 Shred the cabbage finely and chop the onion. Place them in a saucepan with water, butter, salt, pepper, and nutmeg.
- 2 Cook gently for 1 hour or longer until the vegetables are tender.
- 3 Add the milk and wheatmeal thickening. Simmer gently for 10 minutes.
- 4 Serve with little squares of toasted or fried bread, or plain rusks.
