Creamy Cabbage And Onion Soup

Ingredients

  • 1 fair-sized cabbage
  • 1 large Spanish onion
  • 1.5 oz butter
  • salt and pepper to taste
  • 1/8 tsp nutmeg
  • 1.5 pints milk
  • 2 tbsp Allinson fine wheatmeal
  • 1 quart water
  • toasted or fried bread squares or plain rusks for serving

Method

  1. 1 Shred the cabbage finely and chop the onion. Place them in a saucepan with water, butter, salt, pepper, and nutmeg.
  2. 2 Cook gently for 1 hour or longer until the vegetables are tender.
  3. 3 Add the milk and wheatmeal thickening. Simmer gently for 10 minutes.
  4. 4 Serve with little squares of toasted or fried bread, or plain rusks.
