Creamy Buttered White Bean Puree
Ingredients
- 1 pint dried white beans
- 1 generous tablespoon butter
- Salt and pepper to taste
Method
- 1 Pick over and wash the beans, then soak them overnight.
- 2 Drain the beans, place them in a saucepan with cold water to cover, and cook until tender, about an hour.
- 3 Press the cooked beans through a sieve.
- 4 Return the puree to a saucepan, add butter, salt, and pepper, heat until very hot, and serve.
