Creamy Buttered White Bean Puree

Ingredients

  • 1 pint dried white beans
  • 1 generous tablespoon butter
  • Salt and pepper to taste

Method

  1. 1 Pick over and wash the beans, then soak them overnight.
  2. 2 Drain the beans, place them in a saucepan with cold water to cover, and cook until tender, about an hour.
  3. 3 Press the cooked beans through a sieve.
  4. 4 Return the puree to a saucepan, add butter, salt, and pepper, heat until very hot, and serve.
