Creamy Butter Mussels With Parsley
Ingredients
- 1 lb mussels, cleaned
- 1 cup water
- Salt to taste
- 1 tbsp butter
- 1 tbsp flour
- Black pepper to taste
- 1 tbsp chopped parsley
- 1 tsp vinegar
Method
- 1 Thoroughly wash mussels and remove any weeds or debris. Place them in a clean saucepan with a little water and enough salt to season.
- 2 Set over medium heat and boil, tossing occasionally, until the shells begin to open. Remove from heat and pour the cooking liquor into a basin.
- 3 Remove one shell from each mussel and return the meat to the saucepan. Add the reserved liquor, butter, flour, pepper, parsley, and vinegar.
- 4 Toss the mixture over the fire until the mussels have boiled for five minutes. Serve immediately.
