Creamy Brussels Sprout Purée
Ingredients
- 2 lbs Brussels sprouts
- Butter
- 1 tsp flour
- Gravy or meat extract and water
- 3 egg yolks
- 1 pint milk
- 1.5 tbsp butter
Method
- 1 Cook Brussels sprouts in boiling water, then drain and toss in butter for 5 minutes.
- 2 Sprinkle with flour and cook in fast-boiling gravy or meat extract mixture, uncovered, to keep green.
- 3 Pass the mixture through a sieve and let it sit for 10 minutes.
- 4 Bind with egg yolks and milk, then stir in butter just before serving.
