Creamy Brussels Sprout Purée

Ingredients

  • 2 lbs Brussels sprouts
  • Butter
  • 1 tsp flour
  • Gravy or meat extract and water
  • 3 egg yolks
  • 1 pint milk
  • 1.5 tbsp butter

Method

  1. 1 Cook Brussels sprouts in boiling water, then drain and toss in butter for 5 minutes.
  2. 2 Sprinkle with flour and cook in fast-boiling gravy or meat extract mixture, uncovered, to keep green.
  3. 3 Pass the mixture through a sieve and let it sit for 10 minutes.
  4. 4 Bind with egg yolks and milk, then stir in butter just before serving.
