Creamy Brown Butter Onion Eggs

Ingredients

  • 4 hard-boiled eggs
  • 2 tbsp butter
  • 1 small onion, thinly sliced
  • 2 tsp flour
  • 1 cup hot broth
  • Salt and pepper to taste
  • 1 tsp cream

Method

  1. 1 Shell the hard-boiled eggs and cut them into 1/3-inch thick disks.
  2. 2 Melt butter in a saucepan and brown the sliced onion slices. Remove the onion from the butter.
  3. 3 Add flour to the butter and mix without browning. Thin with hot broth, then add salt and pepper. Simmer for 10 minutes.
  4. 4 Gently place the egg slices into the sauce to warm through, stirring carefully to avoid breaking them. Do not boil.
  5. 5 Just before serving, stir in the cream and serve immediately.
