Creamy Brown Butter Onion Eggs
Ingredients
- 4 hard-boiled eggs
- 2 tbsp butter
- 1 small onion, thinly sliced
- 2 tsp flour
- 1 cup hot broth
- Salt and pepper to taste
- 1 tsp cream
Method
- 1 Shell the hard-boiled eggs and cut them into 1/3-inch thick disks.
- 2 Melt butter in a saucepan and brown the sliced onion slices. Remove the onion from the butter.
- 3 Add flour to the butter and mix without browning. Thin with hot broth, then add salt and pepper. Simmer for 10 minutes.
- 4 Gently place the egg slices into the sauce to warm through, stirring carefully to avoid breaking them. Do not boil.
- 5 Just before serving, stir in the cream and serve immediately.
