Creamy Broccoli And Potato Soup
Ingredients
- 4 cups broccoli, chopped
- 1 small onion, chopped
- 1 cup chicken or vegetable broth, low-sodium
- 1 cup evaporated milk, non-fat
- 1/4 cup instant mashed potatoes (prepared in water)
- Salt and pepper to taste
- 1 tablespoon cheddar cheese, shredded
Method
- 1 Combine broccoli, onion, and broth in a large saucepan.
- 2 Bring to a boil, then reduce heat, cover, and simmer for 10 minutes until vegetables are tender.
- 3 Add milk and slowly stir in prepared mashed potatoes.
- 4 Cook, stirring constantly, until bubbly and thickened.
- 5 Season with salt and pepper; add more milk or water if too thick.
- 6 Ladle into bowls and sprinkle with cheese.
