  • 1 lb young broad beans, shelled
  • 1 ½ cups milk
  • 4 oz salted butter
  • 1 tbsp chopped parsley
  • Salt and pepper to taste
  • 2 egg yolks
  • 1 tbsp heavy cream
  • Bread slices, fried for garnish

Method

  1. 1 Blanch shelled beans in boiling water for 1 minute, then drain.
  2. 2 Heat milk, butter, parsley, salt, and pepper in a saucepan until simmering.
  3. 3 Add beans and simmer for 10 minutes until tender.
  4. 4 Whisk egg yolks and cream into the hot sauce to thicken slightly.
  5. 5 Serve immediately on a hot dish, garnished with fried bread strips.
