Creamy Broad Bean Sauce With Fried Bread
Ingredients
- 1 lb young broad beans, shelled
- 1 ½ cups milk
- 4 oz salted butter
- 1 tbsp chopped parsley
- Salt and pepper to taste
- 2 egg yolks
- 1 tbsp heavy cream
- Bread slices, fried for garnish
Method
- 1 Blanch shelled beans in boiling water for 1 minute, then drain.
- 2 Heat milk, butter, parsley, salt, and pepper in a saucepan until simmering.
- 3 Add beans and simmer for 10 minutes until tender.
- 4 Whisk egg yolks and cream into the hot sauce to thicken slightly.
- 5 Serve immediately on a hot dish, garnished with fried bread strips.
