Creamy Black Bean Soup With Cilantro
Ingredients
- 2 (15 ounce) cans black beans, drained and rinsed
- 2 cups chicken broth or vegetable broth
- 1 cup medium salsa
- 1 teaspoon ground cumin
- 2 tablespoons low-fat or fat-free sour cream
- Fresh cilantro, chopped
Method
- 1 Puree one can of black beans with the broth, salsa, and cumin in a blender until smooth.
- 2 Combine the pureed mixture with the remaining whole beans in a medium saucepan and heat through.
- 3 Ladle the soup into 4 bowls and serve.
- 4 Top each bowl with sour cream and garnish with fresh chopped cilantro.
