Creamy Beet And Mackerel Salad
Ingredients
- 1 cup boiled potatoes, diced
- 1 cup beet root, diced
- 1 cup fish (mackerel, salmon) or cold meat, diced
- 1 cup celery root or stock, diced
- 1 apple, diced
- Olives, chopped
- Pickles, chopped
- Salt and pepper to taste
- Cream, for binding
- Cream, for sauce
- Vinegar, for sauce
- Hard-boiled eggs, sliced
- Olives, for garnish
- Beets, for garnish
Method
- 1 Dice the boiled potatoes, beet root, fish or cold meat, celery root, and apple into small squares.
- 2 Finely chop the olives and pickles.
- 3 Combine the diced vegetables and meat with the chopped olives and pickles in a bowl.
- 4 Season with salt and pepper, then mix in enough cream to bind the salad together.
- 5 Whip cream lightly and mix with vinegar to create a dressing.
- 6 Garnish the salad with hard-boiled eggs, olives, and beets before serving.
