Creamy Baked Potatoes With Salt Pork
Ingredients
- 2 hot, mealy potatoes
- scalded cream
- salt
- white pepper
- ½ ounce boiled salt pork, cut into small pieces
- 1 tablespoon fat from the pork
- grated Parmesan cheese
- 1 small pat of butter
Method
- 1 Slice the hot potatoes and cut slices into squares.
- 2 Place potatoes in a saucepan with scalded cream to cover, salt, and pepper.
- 3 Add the small pieces of boiled salt pork and simmer until blended.
- 4 Transfer to a small au gratin dish, top with Parmesan cheese and butter.
- 5 Place in the oven briefly to brown the top, then serve.
