Creamy Baked Cod With Eggs
Ingredients
- 1 oz butter
- 1 oz flour
- 1 pint milk
- 1 minced onion
- 1 carrot
- 1 bunch sweet herbs
- 2-3 cloves
- Nutmeg, pepper, and salt to taste
- 2-3 tbsp cream
- 2-3 lbs cod, boiled and flaked
- Hard-boiled eggs, sliced
Method
- 1 Simmer milk with onion, carrot, herbs, cloves, nutmeg, pepper, and salt. Strain and reserve the infused milk.
- 2 Melt butter in a saucepan, whisk in flour to make a roux, then gradually whisk in the hot infused milk. Bring to a boil.
- 3 Stir in cream and simmer briefly until thickened. Remove from heat.
- 4 Gently fold in the flaked, boneless cod until coated and heated through.
- 5 Transfer to a serving dish and garnish with sliced hard-boiled eggs.
