Creamy Baked Cod With Eggs

Ingredients

  • 1 oz butter
  • 1 oz flour
  • 1 pint milk
  • 1 minced onion
  • 1 carrot
  • 1 bunch sweet herbs
  • 2-3 cloves
  • Nutmeg, pepper, and salt to taste
  • 2-3 tbsp cream
  • 2-3 lbs cod, boiled and flaked
  • Hard-boiled eggs, sliced

Method

  1. 1 Simmer milk with onion, carrot, herbs, cloves, nutmeg, pepper, and salt. Strain and reserve the infused milk.
  2. 2 Melt butter in a saucepan, whisk in flour to make a roux, then gradually whisk in the hot infused milk. Bring to a boil.
  3. 3 Stir in cream and simmer briefly until thickened. Remove from heat.
  4. 4 Gently fold in the flaked, boneless cod until coated and heated through.
  5. 5 Transfer to a serving dish and garnish with sliced hard-boiled eggs.
