Creamy Asparagus And Onion Soup
Ingredients
- 4 bunches asparagus
- 1 small onion
- 1 pint milk
- ½ pint heavy cream
- 1½ tablespoons sugar
- 1 large tablespoon butter
- 1½ tablespoons flour
- pepper to taste
- salt to taste
Method
- 1 Wash asparagus and boil in just enough water to cover until tips are soft.
- 2 Remove tips and set aside. Fry onion in butter, then add to asparagus. Cook until very soft, mashing occasionally to extract juice.
- 3 Pass the mixture through a sieve. Stir in salt, sugar, and flour blended together.
- 4 Stir constantly while adding milk and cream. Serve immediately with croutons. Do not return to heat to prevent curdling.
