Creamy Asparagus And Chicken Soup
Ingredients
- 4 large bunches asparagus
- 1 piece bacon
- 1 large onion, chopped
- Salt and pepper to taste
- 2 quarts water
- 1 chicken, cut up
- Flour
- Butter
- Milk
Method
- 1 Scrape asparagus, cut off 1 inch of tops, and soak in water. Chop the remaining stalks.
- 2 Boil chopped stalks with bacon, onion, salt, pepper, and 2 quarts water until very soft.
- 3 Pulp the mixture through a sieve and strain the cooking liquid back into the pot.
- 4 Add the cut-up chicken and reserved asparagus tops; boil until cooked through.
- 5 Thicken with a mixture of flour, butter, and milk, then serve hot.
