Creamy Asparagus And Chicken Soup

Ingredients

  • 4 large bunches asparagus
  • 1 piece bacon
  • 1 large onion, chopped
  • Salt and pepper to taste
  • 2 quarts water
  • 1 chicken, cut up
  • Flour
  • Butter
  • Milk

Method

  1. 1 Scrape asparagus, cut off 1 inch of tops, and soak in water. Chop the remaining stalks.
  2. 2 Boil chopped stalks with bacon, onion, salt, pepper, and 2 quarts water until very soft.
  3. 3 Pulp the mixture through a sieve and strain the cooking liquid back into the pot.
  4. 4 Add the cut-up chicken and reserved asparagus tops; boil until cooked through.
  5. 5 Thicken with a mixture of flour, butter, and milk, then serve hot.
