Creamy Almond Custard With Orange Blossom
Ingredients
- 6 oz almonds
- 1 ½ cups heavy cream
- 1 small lemon (peel only)
- 2 eggs
- sugar to taste
- 1 tbsp orange flower water or rose water
Method
- 1 Blanch almonds, then pound them into a smooth paste with a splash of rose water.
- 2 Boil the cream with the lemon peel, then remove from heat and discard the peel.
- 3 Stir the almond paste into the warm cream, then add the beaten eggs.
- 4 Cook over low heat, stirring constantly, until the mixture thickens. Do not let it boil.
- 5 Sweeten to taste, let cool slightly, then stir in the orange flower or rose water.
