Creamy Almond Custard With Orange Blossom

Ingredients

  • 6 oz almonds
  • 1 ½ cups heavy cream
  • 1 small lemon (peel only)
  • 2 eggs
  • sugar to taste
  • 1 tbsp orange flower water or rose water

Method

  1. 1 Blanch almonds, then pound them into a smooth paste with a splash of rose water.
  2. 2 Boil the cream with the lemon peel, then remove from heat and discard the peel.
  3. 3 Stir the almond paste into the warm cream, then add the beaten eggs.
  4. 4 Cook over low heat, stirring constantly, until the mixture thickens. Do not let it boil.
  5. 5 Sweeten to taste, let cool slightly, then stir in the orange flower or rose water.
