Creamed Yolk Vanilla Sponge Cake

Ingredients

  • 1 cup sugar
  • 3 egg yolks
  • 6 tablespoons cold water
  • 1 1/4 cups flour
  • 2 teaspoons baking powder
  • pinch salt
  • 3 egg whites

Method

  1. 1 Place sugar and egg yolks in a mixing bowl and cream until light lemon color.
  2. 2 Add cold water, flour, baking powder, and salt. Beat just enough to mix.
  3. 3 Cut and fold in the stiffly beaten egg whites.
  4. 4 Bake in a well-greased and floured tube cake pan in a 350°F oven for 40 minutes.
