Creamed Spinach With Fried Croutons

Ingredients

  • 1 bunch spinach
  • Salt
  • Butter
  • Pepper
  • Cream (optional)
  • Fried croutons

Method

  1. 1 Remove stalks and wash spinach thoroughly in several waters to remove grit.
  2. 2 Place spinach in a saucepan with no added water, just what clings to leaves. Sprinkle with salt.
  3. 3 Cook with lid off until tender, stirring occasionally.
  4. 4 Drain in a colander and wring dry in a clean cloth.
  5. 5 Chop or rub through a wire sieve. Return to saucepan with butter, pepper, salt, and optional cream.
  6. 6 Press into a mound or pyramid in a dish and garnish with fried croutons.
