Creamed Spinach With Fried Croutons
Ingredients
- 1 bunch spinach
- Salt
- Butter
- Pepper
- Cream (optional)
- Fried croutons
Method
- 1 Remove stalks and wash spinach thoroughly in several waters to remove grit.
- 2 Place spinach in a saucepan with no added water, just what clings to leaves. Sprinkle with salt.
- 3 Cook with lid off until tender, stirring occasionally.
- 4 Drain in a colander and wring dry in a clean cloth.
- 5 Chop or rub through a wire sieve. Return to saucepan with butter, pepper, salt, and optional cream.
- 6 Press into a mound or pyramid in a dish and garnish with fried croutons.
