Creamed Spinach With Butter Roux
Ingredients
- 1/2 peck spinach
- 1 1/2 tbsp butter
- 1 tbsp flour
- 1 tbsp salt
- 1/2 cup cream or milk
- 1 tsp salt
- dash pepper
- hard-boiled eggs (for garnish, optional)
Method
- 1 Wash spinach thoroughly in five changes of water to remove grit.
- 2 Cook spinach in a covered saucepan with clinging water for 15 minutes.
- 3 Add 1 tbsp salt and cook 5 minutes longer, then drain and chop finely.
- 4 Melt butter in a saucepan, stir in flour, salt, and pepper.
- 5 Add chopped spinach and cook 5 minutes, stirring constantly.
- 6 Stir in cream or milk and cook 5 minutes more until thickened.
