Creamed Spinach With Butter Roux

Ingredients

  • 1/2 peck spinach
  • 1 1/2 tbsp butter
  • 1 tbsp flour
  • 1 tbsp salt
  • 1/2 cup cream or milk
  • 1 tsp salt
  • dash pepper
  • hard-boiled eggs (for garnish, optional)

Method

  1. 1 Wash spinach thoroughly in five changes of water to remove grit.
  2. 2 Cook spinach in a covered saucepan with clinging water for 15 minutes.
  3. 3 Add 1 tbsp salt and cook 5 minutes longer, then drain and chop finely.
  4. 4 Melt butter in a saucepan, stir in flour, salt, and pepper.
  5. 5 Add chopped spinach and cook 5 minutes, stirring constantly.
  6. 6 Stir in cream or milk and cook 5 minutes more until thickened.
