Creamed Spinach With Butter And Nutmeg

Ingredients

  • 1 bunch spinach
  • 1 tablespoon salt
  • 1 tablespoon butter
  • 1 pinch salt
  • 2 tablespoons cream
  • Grated nutmeg or mace, to taste
  • Lemon juice, to taste

Method

  1. 1 Pick spinach leaves and wash thoroughly in three or four changes of water. Drain well in a colander.
  2. 2 Bring a large pot of water with salt to a boil. Add spinach and boil quickly until tender, about 10 minutes, pressing down frequently.
  3. 3 Strain spinach and squeeze out all excess moisture using a plate or between two plates. Chop finely.
  4. 4 Melt butter in a stewpan, add chopped spinach, salt, nutmeg, and lemon juice. Stir well.
  5. 5 Stir in cream (or rich gravy) and heat through. Serve in a dish scored into squares.
