Creamed Spinach With Butter And Nutmeg
Ingredients
- 1 bunch spinach
- 1 tablespoon salt
- 1 tablespoon butter
- 1 pinch salt
- 2 tablespoons cream
- Grated nutmeg or mace, to taste
- Lemon juice, to taste
Method
- 1 Pick spinach leaves and wash thoroughly in three or four changes of water. Drain well in a colander.
- 2 Bring a large pot of water with salt to a boil. Add spinach and boil quickly until tender, about 10 minutes, pressing down frequently.
- 3 Strain spinach and squeeze out all excess moisture using a plate or between two plates. Chop finely.
- 4 Melt butter in a stewpan, add chopped spinach, salt, nutmeg, and lemon juice. Stir well.
- 5 Stir in cream (or rich gravy) and heat through. Serve in a dish scored into squares.
