Creamed Spinach With Boiled Eggs
Ingredients
- 1 peck fresh spinach
- ½ cup sweet cream
- 1 tsp sugar
- Lemon juice
- 2 boiled eggs, sliced
Method
- 1 Pick over spinach, trim roots and tough stalks. Wash thoroughly in several waters to remove grit, then shake dry.
- 2 Place spinach in a pot or double boiler. Cover closely and cook slowly, stirring frequently, until tender (20-30 minutes).
- 3 Drain spinach in a colander. Press with the back of a plate to extract all excess water, then chop very fine.
- 4 Add cream and sugar to the chopped spinach. Boil up once, stirring constantly, until hot. Serve with lemon juice and sliced boiled eggs.
