Creamed Spinach With Boiled Eggs

Ingredients

  • 1 peck fresh spinach
  • ½ cup sweet cream
  • 1 tsp sugar
  • Lemon juice
  • 2 boiled eggs, sliced

Method

  1. 1 Pick over spinach, trim roots and tough stalks. Wash thoroughly in several waters to remove grit, then shake dry.
  2. 2 Place spinach in a pot or double boiler. Cover closely and cook slowly, stirring frequently, until tender (20-30 minutes).
  3. 3 Drain spinach in a colander. Press with the back of a plate to extract all excess water, then chop very fine.
  4. 4 Add cream and sugar to the chopped spinach. Boil up once, stirring constantly, until hot. Serve with lemon juice and sliced boiled eggs.
