Creamed Spinach Dumplings
Ingredients
- 1 heaping tbsp butter
- 1 tbsp cream
- ½ tsp sugar
- 1 heaping tbsp flour
- ¾ cup cooked finely chopped spinach
- 2 eggs
- salt and pepper to taste
- 1/8 tsp powdered mace
- water for boiling
- parsley for garnish
Method
- 1 Melt butter, cream, and sugar in a saucepan over heat until boiling.
- 2 Stir in flour and bring to a boil, then mix in the chopped spinach; remove from heat and cool.
- 3 Beat in eggs one at a time, seasoning with salt, pepper, and mace.
- 4 Dip a spoon in cold water, scoop mixture into an oblong shape, then dip spoon in boiling water to release the ball into salted boiling water.
- 5 Cook balls for 4-5 minutes without vigorous boiling, then drain in a colander.
- 6 Prepare a cream sauce, add the balls, bring to a boil, and serve garnished with parsley.
