  • cold boiled potatoes, diced or sliced
  • milk or cream
  • butter
  • salt
  • pepper
  • fresh parsley, chopped

Method

  1. 1 Dice or slice cold boiled potatoes into 1/8-inch thick pieces.
  2. 2 Place potatoes in a saucepan and cover with milk or cream.
  3. 3 Cook until the potatoes have absorbed nearly all the liquid.
  4. 4 Stir in butter, salt, and pepper to taste.
  5. 5 Garnish with chopped fresh parsley just before serving.
