  • 1 cup cold boiled potatoes, diced
  • Milk, enough to cover
  • 3 tablespoons butter
  • Salt and pepper to taste
  • Dash of paprika

Method

  1. 1 Melt butter in a saucepan over low heat.
  2. 2 Add diced potatoes, salt, pepper, and paprika; stir to coat.
  3. 3 Cover and cook for 1 minute, then uncover and stir well.
  4. 4 Cover again and cook for another minute.
  5. 5 Pour in enough milk to cover the potatoes completely.
  6. 6 Cook very slowly for 45 minutes, keeping the pan covered and stirring occasionally.
