Creamed Meat Pâté

Ingredients

  • 8 oz meat pulp
  • 5 oz butter
  • 1 whole egg
  • 4 egg yolks (or 4 egg whites if using white meat)
  • 1 pint whipped cream (approx. ¾ cup heavy cream)

Method

  1. 1 Combine meat pulp, butter, egg, and yolks (or whites) in a bowl.
  2. 2 Beat the mixture very thoroughly until well combined.
  3. 3 Pass the mixture through a sieve to ensure a smooth texture.
  4. 4 Place the mixture on ice and slowly beat in the whipped cream.
