Creamed Meat Pâté
Ingredients
- 8 oz meat pulp
- 5 oz butter
- 1 whole egg
- 4 egg yolks (or 4 egg whites if using white meat)
- 1 pint whipped cream (approx. ¾ cup heavy cream)
Method
- 1 Combine meat pulp, butter, egg, and yolks (or whites) in a bowl.
- 2 Beat the mixture very thoroughly until well combined.
- 3 Pass the mixture through a sieve to ensure a smooth texture.
- 4 Place the mixture on ice and slowly beat in the whipped cream.
