Creamed Lobster With Peppers
Ingredients
- 2 tablespoons butter
- 1½ pints milk
- 2 tablespoons flour
- 1 egg yolk
- 1 can lobster
- 1 onion, juiced
- 1 lemon, juiced
- 1 stalk celery, chopped fine
- paprika
- sweet peppers, cut fine
Method
- 1 Melt butter and whisk in flour to make a roux. Add milk and cook until thickened.
- 2 Remove from heat and beat in the egg yolk.
- 3 Pick lobster meat to pieces. Chop celery and sweet peppers finely. Juice onion and lemon.
- 4 Mix lobster, vegetables, juices, and paprika into the cream sauce.
- 5 Serve very hot in ramekins.
