Creamed Lobster With Peppers

Ingredients

  • 2 tablespoons butter
  • 1½ pints milk
  • 2 tablespoons flour
  • 1 egg yolk
  • 1 can lobster
  • 1 onion, juiced
  • 1 lemon, juiced
  • 1 stalk celery, chopped fine
  • paprika
  • sweet peppers, cut fine

Method

  1. 1 Melt butter and whisk in flour to make a roux. Add milk and cook until thickened.
  2. 2 Remove from heat and beat in the egg yolk.
  3. 3 Pick lobster meat to pieces. Chop celery and sweet peppers finely. Juice onion and lemon.
  4. 4 Mix lobster, vegetables, juices, and paprika into the cream sauce.
  5. 5 Serve very hot in ramekins.
