Creamed Lima Beans With Roux

Ingredients

  • 1 lb lima beans, shelled
  • Water for boiling
  • 1/2 cup milk or cream
  • 1 tsp flour
  • Salt to taste

Method

  1. 1 Shell and wash the lima beans. Place in a pot and cover with boiling water.
  2. 2 Cook for about one hour or until tender, allowing the water to nearly evaporate.
  3. 3 Whisk flour into the milk or cream, then add to the beans.
  4. 4 Season with salt, bring to a boil once, and serve immediately.
