Creamed Lima Beans With Roux
Ingredients
- 1 lb lima beans, shelled
- Water for boiling
- 1/2 cup milk or cream
- 1 tsp flour
- Salt to taste
Method
- 1 Shell and wash the lima beans. Place in a pot and cover with boiling water.
- 2 Cook for about one hour or until tender, allowing the water to nearly evaporate.
- 3 Whisk flour into the milk or cream, then add to the beans.
- 4 Season with salt, bring to a boil once, and serve immediately.
