Creamed Fish And Mushroom Toasts

Ingredients

  • 1/2 pint cold cooked fish, picked apart
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 pint milk
  • 1/2 tsp salt
  • 1 tsp soy sauce
  • dash red pepper
  • 1/8 tsp black pepper
  • 4-5 sliced mushrooms
  • 6 slices bread, crusts removed
  • 1/2 cup mashed potatoes, light
  • melted butter, for brushing

Method

  1. 1 Rub butter and flour together, add milk, and stir until boiling.
  2. 2 Add salt, soy sauce, and peppers; stir to combine.
  3. 3 Add fish and mushrooms; heat over hot water without stirring.
  4. 4 Toast one side of bread slices and remove crusts.
  5. 5 Pipe mashed potatoes in ropes or rosettes around the edge of the untoasted side.
  6. 6 Brush with melted butter and bake at 400°F until golden brown.
  7. 7 Fill centers with the hot creamed fish and serve immediately.
