Creamed Fish And Mushroom Toasts
Ingredients
- 1/2 pint cold cooked fish, picked apart
- 2 tbsp butter
- 2 tbsp flour
- 1/2 pint milk
- 1/2 tsp salt
- 1 tsp soy sauce
- dash red pepper
- 1/8 tsp black pepper
- 4-5 sliced mushrooms
- 6 slices bread, crusts removed
- 1/2 cup mashed potatoes, light
- melted butter, for brushing
Method
- 1 Rub butter and flour together, add milk, and stir until boiling.
- 2 Add salt, soy sauce, and peppers; stir to combine.
- 3 Add fish and mushrooms; heat over hot water without stirring.
- 4 Toast one side of bread slices and remove crusts.
- 5 Pipe mashed potatoes in ropes or rosettes around the edge of the untoasted side.
- 6 Brush with melted butter and bake at 400°F until golden brown.
- 7 Fill centers with the hot creamed fish and serve immediately.
