Creamed Crab With Lemon And Peppers

Ingredients

  • 1 1/2 cups milk
  • 6 tablespoons flour
  • 1 1/2 cups crab meat
  • 1 green pepper, minced
  • 1 onion, grated
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 lemon, grated rind
  • Juice of 1 lemon
  • 2 tablespoons butter

Method

  1. 1 Place milk and flour in a saucepan and stir to blend.
  2. 2 Bring to a boil and cook for three minutes.
  3. 3 Add crab meat, green pepper, onion, salt, paprika, lemon rind, lemon juice, and butter.
  4. 4 Toss gently and cook until well heated.
  5. 5 Serve in ramekins or custard cups, dusting with paprika.
