Creamed Crab With Lemon And Peppers
Ingredients
- 1 1/2 cups milk
- 6 tablespoons flour
- 1 1/2 cups crab meat
- 1 green pepper, minced
- 1 onion, grated
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/4 lemon, grated rind
- Juice of 1 lemon
- 2 tablespoons butter
Method
- 1 Place milk and flour in a saucepan and stir to blend.
- 2 Bring to a boil and cook for three minutes.
- 3 Add crab meat, green pepper, onion, salt, paprika, lemon rind, lemon juice, and butter.
- 4 Toss gently and cook until well heated.
- 5 Serve in ramekins or custard cups, dusting with paprika.
