Creamed Corn Soup
Ingredients
- 1 cup corn kernels
- 1 cup cold water
- 4 cups milk
- 2 tablespoons butter
- 1 tablespoon chopped onion
- 2 tablespoons flour
- 2 teaspoons salt
- 0.25 teaspoon white pepper
- 2 egg yolks
Method
- 1 Chop corn and cook in cold water for 20 minutes.
- 2 Melt butter, add onions, and cook until light brown.
- 3 Stir in flour, then gradually add heated milk, mixing thoroughly.
- 4 Combine milk mixture with corn, season with salt and pepper, and rub through a sieve.
- 5 Beat egg yolks in a tureen, slowly pour hot soup over them, and serve immediately.
