Creamed Corn Soup

Ingredients

  • 1 cup corn kernels
  • 1 cup cold water
  • 4 cups milk
  • 2 tablespoons butter
  • 1 tablespoon chopped onion
  • 2 tablespoons flour
  • 2 teaspoons salt
  • 0.25 teaspoon white pepper
  • 2 egg yolks

Method

  1. 1 Chop corn and cook in cold water for 20 minutes.
  2. 2 Melt butter, add onions, and cook until light brown.
  3. 3 Stir in flour, then gradually add heated milk, mixing thoroughly.
  4. 4 Combine milk mixture with corn, season with salt and pepper, and rub through a sieve.
  5. 5 Beat egg yolks in a tureen, slowly pour hot soup over them, and serve immediately.
