Creamed Clams Over Toast
Ingredients
- Clams in their own liquor
- 1 cup chopped clams
- 1 cup thick cream sauce
- 1 tbsp butter
- 1 tbsp flour
- 1/2 cup clam liquor
- 1/2 cup milk or cream
- Pepper
- Salt if necessary
- Small pieces of toast
Method
- 1 Scald clams in their own liquor until cooked. Chop into fine dice and measure.
- 2 Melt butter in a saucepan. Stir in flour and cook without browning.
- 3 Slowly add clam liquor and milk or cream. Season with pepper and salt. Stir until smooth and thick.
- 4 Add chopped clams just before serving. Pour over small pieces of toast.
