Creamed Clams Over Toast

Ingredients

  • Clams in their own liquor
  • 1 cup chopped clams
  • 1 cup thick cream sauce
  • 1 tbsp butter
  • 1 tbsp flour
  • 1/2 cup clam liquor
  • 1/2 cup milk or cream
  • Pepper
  • Salt if necessary
  • Small pieces of toast

Method

  1. 1 Scald clams in their own liquor until cooked. Chop into fine dice and measure.
  2. 2 Melt butter in a saucepan. Stir in flour and cook without browning.
  3. 3 Slowly add clam liquor and milk or cream. Season with pepper and salt. Stir until smooth and thick.
  4. 4 Add chopped clams just before serving. Pour over small pieces of toast.
