Creamed Beef Popovers
Ingredients
- 1 egg
- 1 cup milk
- 1 cup sifted flour
- 1/2 tsp salt
- 1/4 lb dried beef
- 1 1/2 cups milk
- 6 tbsp flour
- 2 tbsp minced parsley
- butter for greasing
- butter for topping
- paprika for dusting
Method
- 1 Preheat popover pans in a hot oven (425°F). In a bowl, beat 1 egg, 1 cup milk, 1 cup flour, and 1/2 tsp salt for 5 minutes.
- 2 Remove hot pans, grease well, and fill with batter. Bake at 425°F for 10 minutes, then reduce heat to 300°F and bake 25 minutes more without opening the door.
- 3 While popovers bake, cut 1/4 lb dried beef fine. Blanch in boiling water for 5 minutes, then drain.
- 4 Whisk 6 tbsp flour into 1 1/2 cups milk in a saucepan. Bring to a boil, cook 3 minutes. Stir in drained beef and 2 tbsp parsley. Simmer until popovers are done.
- 5 Slice tops off popovers, fill with creamed beef, dot with butter, and dust with paprika. Serve immediately.
